Christmas is coming and we are hard at work thinking about our secret Santa gifts!
Christmas is so much fun at Hiba with big groups all snuggled together in the Hiba Lounge, all slowly unwinding over fresh salads, homemade houmous, baba ghanouj and plates of sizzling chicken and lamb grills.
Christmas has special meaning to Palestinians as Jesus was born in Bethlehem, a town in the West Bank. Although only a fifth of Palestinians are Christians, Palestinians of all faiths join in this celebration. There is a parade in the streets, Santa handing out sweets to the naughty and nice, all reflected in the bejewelled colourful lights in the streets and main square.
Food, as usual, brings people together and the doors are open all day to family and friends to feast on homemade cookies such as the date-filled mamoul pastries and huge pots of Qidreh, a lamb and rice speciality, served with laban.

Supporting the Spring Up Foundation
We are also excited to be supporting some dear friends at the Spring Up Foundation (https://www.springupfoundation.org/) which provide scholarships to young Palestinian students who wish to study in their homeland.
This year they have ventured far to design a calendar of traditional Palestinian recipes. You can buy a copy of the calendar online for £12 (incl P&P) via the button/link below, or we have some in stock which you can buy or request if we run out.
